Watermelon Cooler

With the rain clouds looming and feeling a little under the weather I decided to create a refreshing mid morning snack.
So I created the, Watermelon Cooler a delicious real fruit smoothie with hints of coriander and bursts of mint.
Such a simple yet tasty treat which contains ice, watermelon, strawberry, lemon simple syrup, coriander and sprig of mint. A great way to brighten up any day.
Here’s the recipe:

Watermelon Cooler

Ingredients:
3 large fresh strawberries, hull and cut in half
250g watermelon, large dice (remove green skin)
5 mint leaves
1 tbsp. fresh coriander
2 cups ice
Lemon simple syrup:
1/4 lemon
1 tsp. sugar
200ml water

Method:
1. In a small sauce pan combine water, lemon and sugar. Bring to a simmer for 2 minutes so sugar is dissolved and then turn of the heat, let cool slightly. Discard the piece of lemon.
2. In a blender place ice, watermelon, strawberries, mint, coriander and lemon simple syrup.
3. blitz for 2 minutes until well combined serve topped with a slice of fresh strawberry and a sprig of coriander and mint.
Serves: 2 generous servings.
