Nearly everyone in the country is now in lock down apart from essential services and this means time at home for the rest of us. With that of course comes extra time on our hands, I hope to create a new recipe most days to share with you all out there.
Today we have a recipe using leftover mashed potato and cheese to a rough butter style dough, I added spring onion but you could leave this out or add different herbs, cheeses, parmesan would be yum! The potato cheese puffs are similar to a scone but the mash potato adds fluffiness to them, you’ll have one and want to go back for more!
Cheese Potato Puffs
Ingredients
3/4 cup flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
50 gm butter, cubed
1 egg, separated
1 tbsp milk
1 cup cooled mashed potato
1 tbsp spring onion, chopped
1 cup grated cheese, pizza blend or sharp cheese
Method:
1. Pre-heat oven 170 degress fan bake.
2.In bowl combine flour, baking powder, salt, pepper and cubed butter. Rub in with your fingers to form rough breadcrumbs.
3. Mix in egg white, milk, mashed potato, spring onion and grated cheese to form a dough.
4. Line baking tray with paper and roll 9x balls and flatten with fingers slightly, brush with egg yolk and bake for 25 minutes.
5. Cool slightly and serve with butter.
