Words can not even start to explain the outstanding flavour smacking punches that this packs!! That may sound extremely over the top however, with slow braised beer and balsamic hogget necks encased in handmade butter savoury pastry with sides of roast pumpkin mash and molten cheese curds with thyme, sesame sautéed Swiss chard plus a drizzle of homemade mint sauce. I think when I tasted this harmony of flavours I died and went to heaven.
Hoggest necks are one of the cheapest cuts you can get from your local supermarket, $2.22 for 2 hogget necks. I wanted to created a dish that made hogget the shinning star and all accompaniments just made it even better.
